Elephant Apple Pickle

  • – 1) 1 Elephant apple,
  • – 2) 1 tablespoon oil,
  • – 3) 2 teaspoon mustard seeds,
  • – 4) 1 teaspoon asafoetida,
  • – 5) 1 teaspoon turmeric powder,
  • – 6) 1 tablespoon sugar,
  • – 7) 2 teaspoon salt.
  • – 8) Red chili powder, as per taste.

Directions

To proceed:

  • – 1) Quarter the fruit and discard the seeds.
  • – 2) Cut it into large pieces.
  • – 3) Add half teaspoon of salt in 2 cups of water and cook these pieces in the water, till they are soft. (About 3 to 4 minutes.)
  • – 4) Drain the water and cut the large pieces into smaller ones.
  • – 5) Add the remaining salt and sugar to the pieces and mix well, keep aside.
  • – 6) Heat the oil and when it is hot and the mustard seeds and put off the flame.
  • – 7) When the oil is slightly cool, add asafoetida, turmeric and red chili powder.
  • – 8) Add the oil to the pieces and mix well.

This pickle would not keep for long, hence consume in 2/3 days.
