Ash Guard / Petha kheer

 

       

Ingredients

1) 250 gramms Ash Guard. ( When you buy a cut piece of Ash Guard, make sure it is from a big fruit.)

        2) 1 cup milk ( You can use evaporated milk for better flavor, in that case you would need only half the tin.)

        3) Sugar, to taste. ( I have used 1 tablespoon. You can also use sweetners of your choice.)

        4) 1 Tablespoon ghee.

        5) Dry fruits of choice. (about 1 tablespoon )

Directions

To make the kheer

        1) Peel and grate the ash guard (discard the seeds). It will leave lot of water, while grating. Use the same water to cook it.

        2) In a heavy bottom vessel or pressure cooker, add the grated ash guard and cook till, most of the water is evaporated. If pressure cooking it, you can cook it for a minute  or two and then, open the cooker and cook till most of the water is evaporated.

        3) Add sugar and milk and cook for 3 to 4 minutes.

        4) Put off the heat and add chopped dry fruits. You may add food essence of your choice. The kheer will thicken, when cooled.
