Daal Masala

 

Ingredients

 

The ingredients are –

  1. A) For the Daal
  • 1) 2 cups mixture of moong and masoor daal, (soaked for half an hour)
  • 2) 1 cup urad daal, (soaked for half an hour),
  • 3) 1 big onion, cut lengthwise,
  • 4) 2 big ripe tomatoes, finely chopped,
  • 5) 2 green chilies, cut lengthwise in two pieces,
  • 6) 2 tablespoon oil,
  • 7) 2 tablespoon ghee,
  • 8) 4/5 garlic pods, cut lengthwise,

 

  1. B) for the masala
  • 1) 1 teaspoon cumin seeds,
  • 2) 1 teaspoon coriander seeds,
  • 3) 1 teaspoon black pepper corns,
  • 4) A pinch of citric acid ( available in crystals )
  • 5) ½ teaspoon turmeric,
  • 6) 1 teaspoon red chili powder,
  • 7) half teaspoon aji no moto or dark soya sauce,
  • 8) 2 tablespoon chopped green dill leaves or 1 tablespoon dried dill or 1 teaspoon dill seeds.
  • 9) 3 green cardamom,
  • 10) 1 Black cardamom (seeds only),
  • 11) Salt to taste.

 

Directions

  • 1) Wash the soaked dalls till the water runs clear. You need to rub the dalls with your hand, for this.
  • 2) Cook the dalls, in a pan by adding a pinch of turmeric powder. Cook only till they are tender. Do not overcook and do not mash the dall.
  • DAAL MASALA IN COOKER
  • 3) Remove from fire and keep aside.
  • 4) Meanwhile dry roast the masala (except the dill and soya sauce ) ingredients, for few seconds. You may microwave them for 30 seconds. Then  grind them coarsely and then add the dill leaves and soya sauce. ( If you are using dill seeds, you need to roast them )
  • 5) Hit the oil in a pan and fry the cut onion till it turns golden.
  • DAAL MASALA FRIED ONION
  • 6) Add the green chilies and garlic and immediately add the masala mixture.
  • 7) Fry on low heat till it gets aromatic, then add 1 tablespoon ghee.
  • 8) Add the cook dalls and mix gently. let it simmer on low flame for about 5 minutes.
  • 9) Then add remaining ghee and enjoy with naan or rice.
