Tender Jackfruit curry

 

 

Ingredients

faasachee bhajee (1)

  • – 1) 1 kilo tender jackfruit,
  • – 2) ¼ cup cashew nuts,
  • – 3) ¼ cup groundnuts,
  • – 4) ¼ cup desiccated coconut,
  • – 5) 2 large onions,
  • – 6) 8 to 10 garlic pods,
  • – 7) 2 green chilies,
  • – 8) 2/3 red chilies,
  • – 9) 2 tablespoon oil,
  • – 10) 1 teaspoon cumin seeds,
  • – 11) ½ cup curd,
  • – 12) 1 teaspoon sugar,
  • – 13) Salt to taste,
  • – 14) 2/3 stuffed dried chilies ( sandagi mirachi ) if available,
  • – 15) 1 teaspoon goda masala or ½ teaspoon garam masala.

Directions

To proceed –

  • – 1) Put the whole jackfruit in pressure cooker and pressure cook it for 12 to 15 minutes, put off the flame, remove from cooker and let it cool, completely. ( This can be done ahead or even night before. The cooked jackfruit can be kept in refrigerator overnight.)
  • – 2) Cut the jackfruit into 1 inch thick slices and then cut each slice into two parts.
  • – 3) With sharp knife remove the outer thorny skin and inner stem. ( This task is very easy, as the jackfruit is cooked and tender.)
  • – 4) Break the pieces into smaller threads as shown in the photograph.
  • – 5) Chop the onions.
  • – 6) Grind coarsely together both the chilies and garlic.
  • – 7) Heat 1 teaspoon oil and roast the ground nuts and then add the desiccated coconut and roast till it turns golden brown. Remove.
  • – 8) Add little more oil and fry the cashew nuts and stuffed chilies ( if using. ) Remove.
  • – 9) Add the remaining oil and add the cumin seeds.
  • – 10) Add the ground chilies and garlic and fry for a while.
  • – 11) Add the chopped onion and fry till it turns golden.
  • – 12) Add two cups water and add salt, let it boil.
  • – 13) Add goda masala or garam masala.
  • – 14) Add the jackfruit, mix well and cover.
  • – 15) Grind coarsely the roasted groundnuts and desiccated coconut.
  • – 16) Add sugar to curd and beat well.
  • – 17) Add both these to jackfruit and mix well.
  • – 18) While eating top with fried cashew nuts and stuffed chilies.

This curry goes well with any kind of Roti or rice.
