Wada Pav – a substitute



You will need

  • 1) 2 small pav ( I have used one oblong ),
  • 2) ½ cup Bhavnagari gathya ( or any other type of farsan ),
  • 3) 2 medium size potatoes, boiled,
  • 4) 4/5 garlic pods + ½ inch ginger + ¾ green chilies, ground together.
  • 5) 2 teaspoon oil,
  • 6) ½ teaspoon turmeric,
  • 7) ½ teaspoon mustard seeds,
  • 8) A pinch of asafetida,
  • 9) Salt to taste,
  • 10) Green chutney ( 3 green chilies + ½ cup chopped coriander + salt + lime juice, ground together ),
  • 11) Garlic chutney ( 5/6 garlic pods + ½ cup roasted groundnuts + 1 teaspoon red chili powder + salt, ground together),
  • Sweet tamarind chutney, if desired.

You can use readymade green chili sauce and ketchup, instead of the these.

To make wada pav


  • 1) Peel and dice the boiled potatoes.
  • 2) Heat oil in a pan, and when it is hot, add the mustard seeds, turmeric and asafetida.
  • 3) Add the potato and salt, mix well and turn off the heat.
  • 4) Halve the breads and scoop out the inner soft portion, leaving the shells intact.
  • 5) If you wish you can heat these shells, though not required.
  • 6) Roast the scooped out pieces of bread till they are crispy.
  • 7) Ground them, along with bhavnagari gathya to a coarse powder, keep aside.
  • 8) Add the ground ginger, chili and garlic mixture to potatoes and mix and mash.

  • 9) Spread little of the bhavnagari gathya mixture inside the bread shells.
  • 10) Stuff the potato mixture on top of it.
  • 11) You can leave the shells open or join them.
  • 12) Enjoy with chutney

For the sake of photograph, I have sliced it. It is not necessary to slice them.
